Spring is here and Summer is around the corner! The weather is warming up and it’s time for the beach parties and barbeques to commence! This is the best time to start playing around in the kitchen because of all the fresh produce that’s coming into season. Some of my favorites that are fresh from the farm right now are zucchinis, artichokes, asparagus, broccoli, and corn. All of which, can be grilled or steamed, and mixed into your all time winning recipes. Need an idea for a side dish to pair with your organic burgers, chicken, or veggie patties? One of my go-to salad recipes comes from RAWvolution by Matt Amsden. This raw and delicious salad will send you home with an empty dish every time.
Summer Corn Salad
3 Cups fresh corn kernels cut from the cob (approximately 4 ears)
1 Cup chopped celery
1 Cup chopped scallions (green onions)
½ Cup Thai Coconut water (or ½ cup coconut milk if you want it creamy)
½ Cup fresh lemon juice
2 Tablespoons agave nectar
2 Tablespoons olive oil
1 ½ Teaspoons sea salt
1 Tablespoon curry powder
¼ cup raw pine nuts
In a large bowl, combine all of the salad ingredients and toss to mix thoroughly.
In a high-speed blender, combine all of the dressing ingredients and blend until smooth. Pour over the salad, toss well to mix the dressing with the corn, and serve. Enjoy!
*Optional additions: Add a can of rinsed black beans and an avocado or two to the salad ingredients for a heartier dish.
