Delicious Gluten Free/Dairy Free Waffles and Pancakes

Looking for a new recipe for Sunday brunch? This gluten free and dairy free recipe is a perfect appetite filler for weekend activities. High in protein, and low in sugar these waffles or pancakes will give you long lasting energy.

Ingredients
4 whole organic eggs
2 organic egg whites
1/2 cup almond milk or coconut milk
4 tablespoons unsweetened apple sauce
1 tablespoon canola oil
1/2 teaspoon vanilla
1/3 cup cround chia seeds or salba
1/4 cup ground flax seeds
1/4 cup ground (gluten Free) rolled oats
1/4 teaspoon sea salt
1/4 teaspoon cinnamon
2 teaspoons non-aluminum baking powder

Preparation
1. Combine eggs, milk, apple sauce, oil, and vanilla in a bowl with a whisk or fork.
2. Combine chia seeds, flax, oats, salt, cinnamon, and baking powder in a separate bowl with a fork. Gradually mix/whisk these contents into egg mixture. Allow batter to sit for 30 minutes, stirring occasionally. (Thickening of batter will occur)

3. Pour dollops into a well-heated and oiled (I use coconut oil), stove-top or electric griddle or waffle iron. (Follow waffle iron instructions; so do not require greasing). Fry pancakes until bubbles form at edges, flip, and cook until golden brown on bottom.
4. Top with your favorite fruits, jams, syrup, or peanut butter.
